Sahti is one of the oldest brewing traditions in Europe still alive, originating in rural Finland. This unfiltered ancestral beer is made from a blend of barley malt, rye and oats, but its true originality lies in its natural flavoring: juniper berries and branches. Traditionally, the must is filtered through an elongated wooden vat called a kuurna, lined with juniper branches and straw. This process gives Sahti a unique resinous and fruity flavour, combined with a veiled texture and low effervescence. Containing almost no hops, this powerful farm drink is consumed very fresh, directly after its short fermentation. A valuable symbol of Finland's ethnological heritage, Sahti continues to be brewed artisanally for large family occasions and Nordic village festivals.
